In the Kitchen with E: Fiesta Cheesy Scrambled Eggs

Looking for a quick and tasty breakfast that you can make at home and it's less than 400 calories???  I have one that you can try..........

I made this a couple of weeks ago and it was lovely.  If you are a cheese lover, you have to try this one.

Ingredients (1 Serving):


- 1/4 cup of Fat Free Shredded Cheddar Cheese
- 1 Tsp of Seasoning
- 1 Tbsp of Salsa Con Queso
- 2 Large Eggs
- 2 Tbsp of Salsa
- 3 oz of John Soules Grilled Chicken Strips (Chicken is already fully cooked)
- Oil Spray (or 1 Tbsp of Butter)

Place your skillet on your stove top and turn on medium heat.  Spray the pan with non-stick cooking oil or you can use a tablespoon of butter.  In a bowl, add two large eggs, 1 tsp of seasoning, 1 Tbsp of salsa con queso, and the 3 oz of grilled chicken strips:


Mix (beat) all the ingredients together until everything is mixed well:


Next, pour the mixture into your skillet and the eggs will start cooking immediately.  Use a spatula to gently pull the eggs so they can be fully cooked and also to make sure that your eggs and chicken don't stick to the pan:


Once the eggs are fully cooked, remove them from the pan and place them on a plate.  Top with salsa and shredded cheese:


Calories in 1 Serving:


With meal prep and cooking, it only took me 10 minutes and it was very filling.  You can add any seasoning that you like and also add anything to this recipe that you love (veggies, any type of meat, and etc.)
