In the Kitchen with E: Chicken and Rice Bowl


Here's a meal that I made when I was short on time (just got off work and trying to keep up with my girls) and didn't feel driving to Chipotle.

So basically, this is a really simple and quick meal that didn't require too many ingredients:

Ingredients (For 1 Serving - Bowl):

 - Chicken Breast Chunks: 4 oz (or you can buy a whole chicken breast and just cut it into chunks)
 - White Rice: 1/2 Cup
 - 1/2 cup of Goya Fiesta Baked Beans "Jalapeno" or any brand you prefer
 - 3 Small Sweet Mini Peppers
 - 1 Small Tomato
 - 2 Tbsp of any brand of Salsa
 - 2 Tbsp of any brand of Salsa Con Queso
 - Garlic Powder (1 Tbsp)
 - Chicken Fajita Seasoning (3 Tsp)
 - Goya Adobo Seasoning (1 Tsp)
 - 1 Tsp of Mexene Chili Powder (Not Pictured)
 - Non-Stick Spray (Not Pictured)

First, I diced the peppers and the tomato into small pieces and sat them aside.  Then sprayed my skillet with the Non-Stick Spray and heated my skillet for my chicken over medium heat.  Also, it two separate pots, I placed the beans in one over low heat and I placed a cup of water into the other over medium high heat for the rice and waited for that to boil.

When my skillet was hot, I added in the chicken with the Goya Adobo, Chicken Fajita, and Garlic seasoning (Yes, I like a lot of seasoning) and let that cook for about 8 minutes.  After the 8 minutes, I added the peppers and tomato and cooked it for another 4 minutes (just really make sure the chicken is fully cooked).  For the other parts for my bowl,  I added the 1/2 of rice to the boiling water and basically cooked the rice until most of the water was absorp and the rice was fluffy.  To the cooked rice, I added a tsp of Mexene Chili Powder and 2 Tbsp of Salsa Con Queso, just to add a little flavor to the rice.  The easiest part was the beans.......I only had to warm them up:

After everything was done, the only thing was left was to set up my bowl.  You can personally set it up anyway you want but for me, I placed the cheesy rice on the bottom, then the beans, then the chicken, and last, just added the salsa:

You can make this any kind of way you love.......add sour cream, add guacamole, don't use beans, use steak instead of chicken, and etc.  Since I'm trying to make my dishes a little bit healthy, I had to skip out on the sour cream and guacamole:
